How do I add an additional items to the menu where you can choose between catering, beverages, equipment, staff, logistics etc.

You can go to Admin > Menu Management > Custom and create additional Categories. You can then edit these new Categories and assign items with a cost. These then show up under the Custom Tab area on the Event Details page where you edit / create your event.
